Shredded Chicken Thigh and Pumpkin Stew

Ingredients
- 4 boneless skinless chicken thighs (~450 g / 1 lb)
- 300 g (10 oz) pumpkin or butternut squash, peeled and deseeded — cut most into chunks and reserve 2-3 fat finger-length wedges (about 8 cm long, two adult fingers wide) for 6-8 month finger feeding
- 1 leek (~100 g), white part only, washed, halved lengthwise and then finely sliced (halving first means no whole coin-shaped rings are left)
- 350 ml (1 1/2 cups) no-salt-added chicken stock (check the label for hidden salt and celery)
- 1 tbsp olive oil
- 1/2 tsp dried oregano
- 1 tbsp finely chopped flat-leaf parsley
Method
- 1. Heat the olive oil in a wide pan over medium heat and soften the leek for 4-5 minutes.
- 2. Add the chicken thighs whole, the pumpkin CHUNKS (hold the wedges back for now), the oregano and the no-salt-added stock.
- 3. Bring to a bare simmer, cover, and cook for 20 minutes.
- 4. Slide in the reserved pumpkin wedges and cook a further 15-20 minutes, until the chicken reaches at least 75°C (165°F) internally and pulls apart easily, and both the chunks and the wedges mash with no resistance. Lift the wedges out whole and set them aside — these are the 6-8 month finger food.
- 5. Remove the thighs to a board. Check carefully for any stray cartilage or bone fragments and discard them.
- 6. If you are feeding a 6-8 month old, set one whole thigh aside and slice it ACROSS the grain into soft finger-length strips. Shred the remaining meat across the grain too, so the fibres come apart short and soft rather than as long threads.
- 7. Mash about half the pumpkin chunks into the cooking liquid to thicken it, then fold the shredded chicken and the parsley back in.
- 8. Cool to lukewarm and press-test a sample of every component — including the reserved wedges — between thumb and forefinger before serving.
- 9. Chill leftovers within 2 hours; use within 2 days or freeze for up to 1 month. Reheat until piping hot, then cool again to lukewarm before serving.
How to serve by age
6–8 months
Do not shred for this age — instead slice the reserved cooked thigh into finger-length strips about 8 cm long and two adult fingers wide so baby can hold them in a closed fist (palmar / whole-hand grasp) and suck the juices. Serve one of the reserved pumpkin wedges whole alongside, finger-length at about 8 cm and soft enough to squash between thumb and forefinger. Loose shreds are hard for a whole-hand grasp to manage and end up dropped.
9–12 months
Serve the shredded chicken as loose 1 cm (pea-sized) soft clumps and the pumpkin in 1 cm cubes, arranged apart on the tray so each one has to be picked up individually with the pincer grasp (thumb + forefinger) — this is exactly the fine-motor practice this stage needs.
Paediatric note
Choose thigh over breast for babies: dark meat carries roughly twice the iron and zinc of breast meat, and its higher fat content keeps it moist so it doesn't dry into hard, hard-to-swallow crumbs. Cook poultry right through to 75°C (165°F) — undercooked chicken is a genuine campylobacter risk and infants have very little tolerance for it.
